If you’re a porridge fan, then you’ve probably already heard about overnight oats by now. They’re basically a cold porridge or bircher muesli type dish, that you can prepare the night before and allow to soak so that in the morning, you’re left with a simple and delicious breakfast for you to enjoy! They’re great if you find yourself a little stuck for time of a morning because alls you have to do is grab this from the fridge and you can easily take it out with you on the go. Just like porridge, you can also garnish these with an array of delicious toppings like fresh berries, nut butters and even some raw chocolate if you’re fancying a little treat!
In case you’re new to the whole overnight oats concept, it really couldn’t be more simple! Just mix together all of the ingredients and leave to thicken for an hour or overnight in the fridge. Another thing that’s great about these kinds of recipes is that you can really get creative and customise them to suit you. This is just one flavour combination here, but you could try mixing together whatever you fancy and have on hand. It’s also a really convenient way to get in some good carbs and protein in the morning.. and it’s all plant based too!
Ingredients:
1/2 cup gluten free oats
1/2 cup coconut milk (I like Koko Dairy free milk)
1 tbsp desiccated coconut
Half a scoop of vegan berry protein
Handful of fresh raspberries
1 tsp chia seeds
Method:
- Mash the raspberries with a fork and combine these with the milk, oats and chia seeds. Mix well so that everything is well incorporated.
- Stir in the desiccated coconut and protein powder and allow this to set for around an hour or overnight in the fridge.
- Once you’re ready to serve the oats, top with whatever you fancy or simply eat on it’s own.
