This recipe includes two things that we’re absolutely loving in store at the moment.. matcha and coconut! Matcha is an amazing superfood with many nutritional health benefits, but did you know that it doesn’t have to be limited to just making tea with? Matcha is actually an amazing ingredient to include into recipe such as protein bars, cakes, porridge, smoothies and in this case, coconut bites! I know that typically green tea can be associated with having quite an intense flavour, but when used in small quantities, I find the subtle flavours of matcha can actually work really nicely in sweet treats!
This is a pretty quick and simple recipe, whereby you basically just need to throw everything into your food processor, whizz it all up and then roll the mixture into balls! So fast food really can be healthy and you can create your own little snack bites in a matter of minutes!
Ingredients
- 1 1/2 cup desiccated coconut
- 1/2 cup ground almonds
- 3 tbsp brown rice syrup
- Dash of vanilla extract
- Small tsp of matcha- if you’re new to using matcha you could just start off with 1/2
- 1 tbsp coconut oil
Instructions
- Add everything into your food processor and blend until well combined.
- Take some of the mixture in your hands and roll into balls. Leave in the fridge for an hour to set.
