These sweet and oh-so-moreish muffins from Tanya will have you all appreciating sweet potato that little bit more!
350g boiled sweet potato
250g buckwheat flour
200g almond meal
5 TBSP maple syrup
30ml almond/ oat milk
3 TBSP melted coconut oil
1 tsp bicarbonate of soda
2 tsp baking powder
1 tsp cinnamon
Pinch of salt
Makes +- 12
Preheat oven to 180 C
Add cooled sweet potato into the food processor and add remaining ingredients and pulse until smooth.
Divide evenly into muffin cases.
Bake for 30 mins
