So, now we’re well and truly getting into the Autumn spirit and pumpkins have started to make an appearance in the supermarkets. We will soon have some more festive recipes coming up and even a special halloween recipe too! For todays recipe, we’ve got a delicious spiced apple overnight oats with the beautiful flavours of cinnamon and nutmeg running through, as well as fresh, crisp green apple. To top it off and add an amazing burst of fruity flavour, why not try whipping up this super quick berry compote using one of our favourite products for this time of year: Lamberts Imuno-strength. We love this product and it’s actually great to include in recipes like this because it has a lovely berry flavour that works really well in fruity dishes like this one!

This is a great breakfast option to prepare the night before, if you’re someone who’s pretty busy in the morning and doesn’t have the time to start making breakfast of a morning. Oats are one of my go-to breakfast foods, as they’re a great source of fibre and slow releasing carbs. I also love how you can add so many different flavours and toppings to porridge/overnight oats, so the combinations are literally endless and you can customise them differently for each day of the week!

Ingredients:

1/2 cup gluten free oats

1/2 cup koko dairy free milk

1/2 green apple- grated

1/2 tsp cinnamon

Pinch nutmeg

Large handful of frozen mixed berries

10ml Lamberts Elderberry syrup

tsp-tbsp honey

 

Method: 

For the overnight oats, combine the oats with the milk, grated apple and spices and stir everything together until well combined. Leave in the fridge for a few hours of overnight.
To make the compote, heat the berries in a saucepan until they start to melt and create a berry sauce like mixture. Add in the syrup and as much or as little honey as you’d like. Stir everything together and heat gently until the compote starts to thicken.

When you’re ready to serve, top the oats with the fruit compote and garnish with toppings of your choice.
