Bea’s deliciously sweet chicken with tahini is perfect serviced with couscous, rice, pasta or a fresh colourful salad!
4 chicken thighs
1 tsp baharat spice,
1 red onion
½ cucumber
150g giant or plain couscous
1 lime
1 garlic clove
1 tbsp tahini
1-2 tbsp soy sauce,
1-2 tbsp honey
10g fresh mint
Preheat the grill to high. Place the chicken thighs on an over tray and coat them in 1 tbsp of olive oil, baharat, salt & pepper. Set aside. Cut the cucumber in half lengthwise, scrape out the seeds using a teaspoon and slice finely. Peel the onions, cut in half and slice finely. Put the onions & cucumber in a bowl, sprinkle with a big pinch of salt, mix well, set aside. Grill the chicken for 12-14 min or until cooked through. Prepare couscous in the meantime according to instructions. Mix together the tahini, honey, soy sauce, finely chopped garlic, finely chopped mint, lime zest and juice of the whole lime, 1 tbsp olive oil to form a dressing.Once the couscous is ready, take small handfuls of the onion & cucumber, squeeze out the excess liquid. Mix together the couscous, onion, cucumber, mint (saving a pinch for garnish) and half the dressing. Serve the chicken on a bed of couscous, top with a dollop of sweet tahini dressing & some mint.
