Fruity Breakfast Smoothie

This deliciously bright smoothie will have you energised and refreshed ready for the day ahead, and also serves well as a mid morning pick me up if you need a boost.

If you prefer a nut free mix, use seed milk and seed butter instead of the nuttier ingredients, it will still taste amazing! Work with the food you have in the fridge, any leafy greens can go in, as well as using fresh or frozen berries.

100g berries (blueberries, blackberries, currants, strawberries) ideally frozen

A generous handful of spinach

1 inch chunk of cucumber

1/2 banana or 1/2 an avocado

A handful of cashews or almonds, or 2 tablespoons of your favourite nut or seed butter

200ml of your favourite plant milk – works really well with oat, almond, hemp and rice or even coconut water for a slightly fresher taste!

Blend it all together until smooth, taste and add a little sweetness if required with a teaspoon of local honey.
